I love Christmas baking, but time is short during the holidays! These no bake Christmas cookies are so yummy! Very easy to make and these cookies taste like the beloved Girl Scout Peanut Butter cookies. Peanut Butter and chocolate fans will adore this cookie!

How To Make No Bake Christmas Cookies

Ingredients

Butter round crackers

Creamy Peanut Butter

Lollipop sticks

Candy melts in white, green and red

Christmas sprinkles and  cake decorations optional

How To Make The Cookie And The Lollipop 

Directions

Assembly line style is the quickest way to make the No Bake Christmas Cookies or the Christmas Lollipops. Prepare the ingredients /materials prior to beginning the assembly and many lollipops will be made in no time!

  1. Lay out crackers in pairs on parchment paper.
  2. Cover one cracker (of the pair) with a healthy and heavy smear of peanut butter. The amount is actually personal preference: a small amount of peanut butter will make a thinner lollipop.
  3. If just making the cookies, skip step 4.
  4. Place a lollipop stick (or a craft stick) with three quarters of the stick on the cracker.
  5. Place the second cracker (the top) of the lollipop and gently press the crackers together to make a sandwich.
  6. Microwave chocolate or candy melts on high in a deep microwave safe bowl. To ensure the chocolate does not burn microwave in 30 second increments until a smooth consistency is achieved.3 Christmas Chocolate Lollipops
  7. Chocolate Melting Tip: Each type of bowl will slightly alter the time needed to melt the chocolate in the microwave.
  8. Cover a baking sheet with parchment paper.
  9. Using your favorite chocolate dipping method cover each cookie or lollipop with chocolate.
  10. Place the cookie/ lollipop on the parchment paper for the chocolate to set.
  11. Decorate the cookie/lollipops if desired.
  12. A quick set can be achieved by placing the lollipops in the refrigerator for 10-15 minutes or a really quick set can be achieved by placing the lollipops in the freezer if time is an issue.
  13. Assembly your Christmas Lollipop Bouquet in a container or vase of your choice or just enjoy the cookies as is!
