Low Oxalate Peanut Butter Banana Sushi is the healthy snack! A low oxalate recipe which makes a crunchy and yummy snack perfect for after school, breakfast, mid afternoon or after dinner.

I love this recipe for a low oxalate breakfast which is filling and nutritious.

How To Make Low Oxalate Peanut Butter Banana Sushi Rolls

Ingredients

Serving 1, 4-5 sushi per banana

1 -2 tbsp Peanut Butter or sun butter

1 banana

1/2 cup Rice Krispies

Directions

  1. Peel the banana.
  2. Cut off the ends of the banana.
  3. Spread a generous amount of peanut butter on the banana. The banana should be covered with peanut butter.
  4. The thickness of the layer of peanut butter needs to be thick enough to cover the banana and allow the coating to stick.
  5. Pour a layer of rice krispies on a paper plate.
  6. Roll the peanut butter covered banana through the rice krispies.
  7. Lightly press the coating to the banana with your fingers.
  8. With a sharp knife, cut the banana into bite size snacks.

Crunchy Coating For The Sushi Rolls

Any crunchy cereal will work.

Rice Krispies add a nice light crunch, but any crunchy low oxalate cereal works!

Substitutes for rice krispies include:

  • crushed cheerios
  • crushed corn flakes
  • crushed frosted flakes

While nuts in general are not low oxalate, one cup of sunflower seeds according to the Harvard list of oxalates is 12 mg of oxalates for one cup of sunflower seeds.

One cup of sunflower seeds is ALOT of sunflower seeds and could be used to coat the banana. The Harvard list of oxalates is how oxalates is measured for the recipe.

Peanut Butter is measured at 13 mg oxalates per one tbsp of peanut butter.

Banana is measured at 3 mg per banana.

Rice Krispies is measured at 4 mg per 1 1/4 cups.

Tips To Make Easy Peanut Butter Sushi Rolls

The most difficult part of this recipe is spreading the peanut butter on the banana. The rolling of the banana in the crunchy topping is easy, but can be a tad sticky and messy.

This is a practice does make perfect and with each banana the assembly time decreases and the look of the sushi rolls will also improve. The first assembly attempt was a little rough, but improved each time.

To help the coating of the sushi rolls set, I popped the finished banana into the refrigerator for a few minutes.

Chilling the banana does make cutting the banana into sushi rolls  much easier.

Assembly TIP! Plastic gloves can also be used during assembly to make clean up a little quicker. These are my favorite gloves for meal prep as the gloves come in different sizes and are latex free.
