Spread a generous amount of peanut butter on the banana. The banana should be covered with peanut butter.
The thickness of the layer of peanut butter needs to be thick enough to cover the banana and allow the coating to stick.
Pour a layer of rice krispies on a paper plate.
Roll the peanut butter covered banana through the rice krispies.
Lightly press the coating to the banana with your fingers.
With a sharp knife, cut the banana into bite size snacks.

Crunchy Coating For The Sushi Rolls Any crunchy cereal will work.Rice Krispies add a nice light crunch but any crunchy low oxalate cereal works! Substitutes for rice krispies include:crushed cheerios crushed corn flakes crushed frosted flakesWhile nuts in general are not low oxalate, one cup of sunflower seeds according to the Harvard list of oxalates is 12 mg of oxalates for one cup of sunflower seeds. One cup of sunflower seeds is ALOT of sunflower seeds and could be used to coat the banana. The Harvard list of oxalates is how oxalates is measured for the recipe.Peanut Butter is measured at 13 mg oxalates per one tbsp of peanut butter.Banana is measured at 3 mg per banana.Rice Krispies is measured at 4 mg per 1 1/4 cups.Assembly TIP! Plastic gloves can also be used during assembly to make clean up a little quicker. These are my favorite gloves for meal prep as the gloves come in different sizes and are latex free.
