Tis the season if you are looking at a leftover spiral sliced ham and wondering what to do with the delicious leftover ham. Cheesy Ham And Hashbrown Casserole is the answer. My family are ham traditionalists which means spiral sliced ham for Christmas and Easter and special family gatherings. Yet we find ourselves with leftover ham and combining the leftover ham with our family favorite of Cheesy Hashbrowns Deluxe is a budget stretching yummy combo.
With the price of a spiral glazed ham we definitely want to use every last morsel! What I love about this recipe is the flexibility to serve it for breakfast, lunch, dinner or as a side. I admit I love this combo so much I can eat it as a meal! (Don’t tell anyone!)
This is my families version of Hashbrowns Deluxe also know as cheesy hashbrowns. I use the tried and proven ingredients of hashbrown, cream of chicken soup and sour cream as the base.

How To Make Cheesy Ham And Hashbrown Casserole
Ingredients
1 bag – two pounds, frozen hash browns
1 can cream of chicken soup (can use low fat or healthy version)
1 8 ounce bag of shredded cheddar cheese
1 cup diced ham (can add more or less)
1 pint of sour cream
1 stick of melted butter or margarine
Salt and pepper to taste
1 cup crushed cornflakes (alternative is crushed potato chips for topping)
Directions
- Defrost the hashbrowns ( I use the microwave.)
- Melt the butter in a large bowl.
- Combine all ingredients into the bowl with the melted butter.
- Spread the Cheesy Ham and Hashbrown mixture into a greased a 13 X 9 pan glass baking dish.
- Add the crushed cornflakes (or alternative). One cup to start and adjust to your liking. If you like a thick crunchy top layer then increase the topping by 50 percent.
- Bake at 350 degrees one hour to one and a half hours.
- Check after one hour.
- I cover the dish for the first hour with aluminum foil to prevent the topping from getting too crispy and browned.
- Uncover dish for the last half hour.
Covering the pan will prevent the top from turning too brown while waiting for the potatoes to cook further.
Can You Freeze Cheesy Hashbrowns?
Yes and yes! This dish freezes very well. I cut individual portion squares from the baking dish and wrap with plastic wrap, then aluminum foil and package in a gallon size bag marked with the date.
You can also easily halve the recipe for a smaller batch with a 8 X 8 glass baking dish. Enjoy what I consider to be the best hashbrown recipe !
Can I Add Vegetables ?
Yes, absolutely! I frequently add cooked broccoli along with the ham to make to make this hashbrown casserole a yummy blend of ham, cheese, broccoli and hashbrowns. Delicious!
