No Bake Valentine’s Day Cookies

No Bake Valentine’s Day Cookies! Yes! Time is short and these no bake chocolate and peanut butter cookies are scrumptious! This easy Valentine’s Day recipe is a copycat recipe for the infamous and beloved Girl Scout Peanut Butter Patties. There are two ways to make this recipe: quick and quicker since I discovered a shortcut also known as the Valentine’s Day cookie hack!

How To Make No Bake Valentine’s Day Cookies

Ingredients

Ritz or Butter flavored crackers

Creamy or chunky peanut butter

Wilton white melts, red candy melts, white chocolate or almond bark

Valentine extra large hearts or sprinkles

Baking sheet

Parchment or waxed paper

Optional, disposable spoons and paper plates.

Directions

  1. Lay out the butter crackers assembly line. 
  2. Make peanut butter cracker sandwiches by adding a healthy size spoonful between each cracker. Be generous with the peanut butter. 
  3. Complete the sandwich by adding the butter cracker top. Gently press both crackers together.
  4. Melt your choice of chocolate in the microwave in your favorite microwave safe bowl. I begin melting chocolate in a glass bowl at 30 second increments in the microwave. My favorite chocolate melting bowl is glass because it is a deep bowl, but be careful and use oven mitts as the glass can become hot. 
  5. Drop the cracker sandwich into the melted chocolate. I put two crackers in a time.
  6. Swirl the chocolate around the cracker.A peanut butter cracker sandwich being dipped into white chocolate in a red bowl.
  7. Carefully bring the cracker out of the melted chocolate.
  8. Set on the parchment or wax paper.
  9. Decorate with edible heart decorations or leave plain! For this batch I mixed and matched the white and red chocolate with pink, red and white decorations.Three versions of Valentine's Day No Bake cookies.   10. Let cool and set about 10-15 minutes.
  11. Clean off the extra chocolate around the bottom edge of the cracker with a knife or spoon.
  12. For quicker setting, pop the crackers into the refrigerator for 10 minutes.

Assembly Tips For Peanut Butter No Bake Cookies

Definitely use a generous portion of peanut butter for the middle of the sandwich. A heaping spoonful is a good place to begin. The peanut butter should fill the entire cracker to the edge, but not be oozing out of the cracker.

I also use disposable spoons and paper plates when making the cookies as the assembly can be a smidge messy and since I want a quick clean up to go with these No Bake cookies. 

Any size of cracker will work from the full size butter cracker to a mini cracker. Flexible, fun and easy!

If you are really pressed for time  pre assembled peanut butter sandwich crackers can be used.
