5cupsleftover stuffing
1egg
leftover diced turkey optional
Bread crumbs optional
Instructions
Preheat oven to 375 degrees.
Line a baking sheet with parchment paper.
Add stuffing to a mixing bowl.
Whip one egg in a separate bowl and add to the stuffing in the bowl.
Mix the eggs and stuffing together (add diced turkey here if desired) and mix with your hands. Like a meatloaf!
Decide upon the size of your mini stuffing balls. One inch wide, one inch tall works well which is a ball which fits into the middle of the palm of your hand.
Rolling the balls in bread crumbs is optional, but adds a nice bit of crunch to the stuffing. I usually make a 1/2 and 1/2 batch of breaded and no breaded stuffing balls.
Place the balls on the baking sheet.
Bake for 15 minutes at 375 degrees. The breaded stuffing balls will be lightly browned. Can leave in additional 5 minutes if a deeper breaded color is desired.
Notes
Add leftover corn or squash from Thanksgiving to make these stuffing balls a dinner all on their own!
