Easy to eat, easy to make and an easy no bake Patriotic Rice Cakes to enjoy the summer berry season and 4th of July. Healthy ingredients combine along with the red, white and blue theme to serve these cute and nutritious rice cake snacks now or any time of the year.

How To Make Patriotic Rice Cake

Ingredients

Rice cake (brand of your choice) Plain or lightly salted

Strawberries

Blueberries

Yogurt (Plain or vanilla work well, brand of your choice)

Or any red and blue fruit, banana is optional

Any fruit works for a healthy Rice Cake snack!

Directions & Assembly

  1. Makes one healthy Patriotic rice cake.
  2. Open package of rice cakes. Remove one! (Okay so the assembly is self explanatory.)
  3. If making more than one rice cake lay the rice cakes out on parchment or wax paper assembly line style.
  4. Spread a generous layer of  your favorite yogurt on top of the rice cake.
  5. Arrange blueberries and strawberries on the yogurt layer in the design of your choice.
  6. For the red, white and blue holidays use red and blue berries or add any fruit of your choice for a healthy treat.

What Are Rice Cakes

I am fairly new to the rice cake and am wondering why I waited so long to try! Which brings the question of what exactly is a rice cake?

Rice cakes are pounded rice which now come in a myriad of different shapes and sizes. Rice cakes were originally marketed as a diet snack in the 1980’s and 1990’s, but have become apart of the mainstream for those seeking healthy treats.

Tan rice cakes are usually made with brown rice while white rice cakes are made with white flour.

Different flavors abound as a novice rice cake shopper will find on the grocery shelves; sea salt, salt free, apple cinnamon, caramel corn, popcorn, chocolate, sesame seed, blueberry and on and on!

Rice cakes, rich chips, rice puffs are all yummy with your favorite yogurt topping whether as a dip or spread. For the rice cake aficionado a rice cake sandwich with a yogurt and fruit filling makes a filling treat or midday snack.

  1. I love Rice Cakes. I’ve eaten them plain, with cheese, and with jelly, but this is a way over the top, delicious idea for them. Never thought of it for some reason! Thanks, I’ll have them this way this week. 🙂
