Copycat PF Chang's Lettuce Wrap Recipe

Great way to use leftover chicken! Copycat PF Chang's Lettuce Wraps recipe is a close match to the original and low oxalate too!

Ingredients

  • 1-1.5 breasts of leftover seasoned chicken or rotisserie chicken depends upon size of chicken breast
  • 1 can of water chestnuts
  • 2 tablespoons low sodium soy sauce
  • 2 tablespoons of brown sugar sugar substitute if watching sugar intake
  • 1/2 teaspoon rice vinegar
  • 1 teaspoon minced garlic
  • 2 to 3 tablespoons dried chives or fresh chives
  • 1 tablespoon of cooking oil or olive for stir fry
  • Iceberg lettuce or white rice or rice sticks

Instructions

  • Chop the water chestnuts and chicken into dice size pieces.
    Mix together: low sodium soy sauce sauce, brown sugar, garlic, chives and rice vinegar.
    Heat one tablespoon of oil in a large frying pan at medium high heat.
    Add the diced chicken and water chestnuts to the pan and then add the stir fry sauce. Cook for five five minutes on medium heat then lower to medium low heat for an additional three to five minutes.
    Ready to serve! Use leaves of iceberg lettuce as the wrap for the traditional recipe or serve over white rice. Rice Sticks are optional for oxalate friendly guests; however rice flour which is the main ingredient in rice sticks are high on the oxalate list.

Notes

PF Chang’s fans will notice their is no special sauce as this is the quick to the table copycat version of PF Changs lettuce wraps made the low oxalate way!  Add your favorite store bought sweet, spicy or sweet and spicy sauce if desired. I actually like the recipe better without the sauce :)
This is a freezer friendly meal! The chicken stir fry freezes very well. Make a large batch and save a few portions to freeze and add fresh lettuce or rice when serving.
