Who Said Ice Cream! Easy Ice Cream Bread Recipe

I had long forgotten about this Ice Cream Bread Recipe when I delightfully discovered this recipe from an old cookbook.

 I am so happy for the rediscovery! So easy, so yummy and  a fun dessert to make with kids especially as a summer activity. This 2 ingredient wonder will delight kids when you involve the gang into making Ice Cream Bread.

Ice cream bread loaf.

Choose your favorite brand and flavor of ice cream and start making bread! One of the best attributes of this recipe is that only 2 ingredients are needed so a perfect way to let each family member choose their favorite ice cream flavor to transform into ice cream bread.

How To Make Ice Cream Bread

INGREDIENTS

2 cups of softened ice cream, any favorite flavor

1.5 cups of self rising flour

DIRECTIONS 

Grease a standard size loaf pan. I make each “flavor” in mini size loaf pans. Actually this is an extremely flexible recipe. I have made the bread in disposable loaf pans too!

Heat oven to 350 degrees.

Mix the flour and softened ice cream.

Gently spoon or use a spatula the mixture into your pre greased pan.

Bake approximately 40 to 45 minutes until the ice cream bread passes the toothpick test.

Insert a toothpick into the middle of the bread and the toothpick should come out clean. My oven runs hot so I start checking at 35 minutes.

Let the bread cool.

TIP: Definitely use your favorite flavor of ice cream. Any flavor works! But this is a recipe only for full flavored and hence, full fat ice cream.

The bread consistency will be compromised if other types of ice cream or yogurt or sorbet are substituted. If you use a vibrant color of ice cream your ice cream bread will take on that color – be forewarned! My favorite ice cream flavors for this recipe include: butter pecan, cookies n cream, french vanilla. I love blueberry ice cream which makes a blue! ice cream bread.

Vanilla Ice Cream Bread Recipe

Of all the flavors of ice cream I have made Ice Cream Bread with I seem to always return to vanilla. Although my favorite ice cream is in fact chocolate the vanilla makes a lightly flavored ice cream that all enjoy. This is especially true when serving with fresh fruit as the combination of the vanilla ice cream bread and the fruit are so refreshing!

Notes

Use only full fat ice cream and Self Rising Flour.
Why full fat ice cream? Because the light versions of ice cream, yogurt or sorbet will not yield the consistency of bread! I have experimented with quite a few and the results were disappointing.

    What an unusual recipe..What sort of texture does it have? More cakey or bread ? Interesting and one to try with the kids ๐Ÿ™‚

      The texture is similar to pound cake side ๐Ÿ™‚
