Yum! Easy Broccoli Feta Puff Recipe

If you like broccoli and feta cheese I think you will like this very quick to make recipe for a Broccoli Feta Puff. I am a fan of puff pastry dough and this is a no muss no fuss version of spinach or broccoli pie. If you want to substitute spinach that works too or if you want to make this a little prettier you cold also make appetizer triangle with the puff pasty.

Easy and yummy Broccoli Feta Puff recipe.

I use this version of the Broccoli Feta Puff for an easy meal; I have definitely used this recipe for baby broccoli triangles for parties; however the appetizer version does take more preparation time. What I also like about this recipe is the ingredients are easily found already in the pantry. Puff pastry comes frozen in two sleeves and I frequently have one sleeve floating around the freezer waiting for round two an as we love feta cheese we always have feta on hand. Broccoli is always in the freezer because … not fond of spinach and I frequently turn spinach pie recipes into broccoli pie recipes.

Ingredients

1 sleeve Pepperidge Farms puff pastry

1/8 tsp. olive oil

1/2 cup chopped onion

1 10 ounce bag frozen broccoli florets ( I like Steamers brand)

2 eggs

6 ounces crumbled feta cheese

1.5 tablespoon Parmesan cheese

1.5 tablespoon plain bread crumbs

1 teaspoon salt

1/2 teaspoon pepper

1/8 stick melted butter

Directions

Add olive oil to a saute pan. Heat the olive oil over medium heat and add chopped onions. Saute the onions until tender.

While the onions are being sauteed, microwave the broccoli florets according to the directions on the bag.

After the onions are sauteed, place the onion in a large mixing bowl, add the cooked broccoli florets and remaining ingredients except the butter. Gently mix all ingredients together.

 

Assemble And  Bake Broccoli Feta Puff

To make individual Broccoli Feta Puffs: roll out the puff pastry into a rectangle. Evenly cut the puff pastry into six squares. Add 1/4 cup if filling per puff. Bring up the four corners of the square to the middle of the puff and press together. Brush with melted butter. Makes six individual puffs.

For a “quick” puff pastry: roll out one sleeve of the puff pastry to flatten the dough slightly. Lay the pastry over the 1. 5 quart baking dish. Fill the pastry. Gently fold the edges over to the middle so that each edge of the pastry folds over each other. Brush with melted butter and bake for 35-40 minutes at 350 degrees. I found a round baking dish with deep edges works best; a round pie plate could also be used but make sure to put the pie plate on a baking sheet to protect the oven.
