Easy to make and a healthy side dish using butternut squash and apples. Fluffy "bake" combines the best of butternut squash and apples (or applesauce) for a versatile side dish which can also be a dessert!
Microwave the butternut squash per directions on the bag. If using fresh butternut squash peel squash, remove seeds, cut into large pieces. This is the most labor intensive part of the recipe, it can be tough to tame a butternut squash, be careful! Boil squash for 20-30 minutes until tender. Drain.
2. In a medium bowl, add the butternut squash and very gently mash a few of the pieces.
3. Add remaining ingredients and gently mix. This will determine the smoothness of the dish.
4. Spoon into a 9" pie dish or an 8" square glass dish.
5. Bake 25-30 minutes at 350 degrees.
Combine topping ingredients with a fork and sprinkle on all or a portion of the Butternut Squash Apple Bake before baking.
Adding the topping does make the Butternut Squash Apple Bake less healthy, but it also makes the dish more visually appealing :)
