I was on the search for leftover ham recipes when I came across a winner! I did not want to venture to the grocery store on the weekend (who really wants to navigate the grocery store any day!) and all the ingredients for this quick, easy and affordable recipe are already in your kitchen. This Easy Ham And Broccoli Crustless Quiche is a light recipe and very flexible as in tweak as you desire with ingredients and it will come out perfect every time.
Last minute I stopped at the Honeybaked Ham store for a sandwich with no intention of purchasing a ham which of course led me not to the whole ham counter but to the pre sliced ham packages where you can buy a few slices instead of an entire Honeybaked Ham. If you’ve ever had the pleasure of Honeybaked Ham it is absolutely delicious and it can be expensive. As I browsed the pre sliced ham I was informed the store was having a buy one, get one free promo! Yes, count me in. We usually save Honeybaked Ham for Easter and Christmas so this was a wonderful surprise. Honeybaked Ham locations are available across the United States, if you would like to try one the locations or order online, information is available here.
This is a great recipe for ham leftovers (or leave out the ham and just use all veggies that works too!) Even the non quiche fans will enjoy this Ham And Crustless Quiche (that’s me) and I enjoyed two slices. Serve with a side salad and rolls and this is one easy and quick quiche.
Ingredients Ham And Broccoli Crustless Quiche
** Six servings, 45 minutes to make and prep **
1 cup diced ham
1 cup broccoli florets (frozen or fresh)
4 egg whites
1/4 cup water
1 cup low fat cottage cheese (can use regular)
Salt and pepper to taste
Heat oven to 375 degrees.
Prepare your broccoli by pre cooking either in the microwave or on the stove top.
Dice the ham while the broccoli is cooking.
Using a large bowl, whisk the eggs, egg whites and water.
Now add the cottage cheese and whisk with intent! You want the cottage cheese to become fairly smooth and mix in with the egg mixture.
Pour into prepared dish. Place the broccoli and ham into the mixture.
Bake for 30 to 35 minutes. Check at the 30 minute mark.
As there is no crust, the top of the Ham And Broccoli Crustless Quiche will be slightly brown and the edges will be sightly brown also. Check that the quiche has set by inserting a knife or toothpick in the middle – it should come out clean.
TWEAKING THE RECIPE
This is a light recipe and the consistency is light as well. Switch out the ham for bacon or leave out the ham all together and use your favorite veggies instead – it all works!
Lower fat by using low fat cottage cheese to help make this a low fat quiche recipe. Add fat ! by adding a nice meltable cheese of your choice on top. I am not a true quiche fan so I added shredded cheese to my servings after plating as I do love cheese and it was even yummier!
Adding A Crust
Absolutely you could add a crust; however I have not tried this yet, but will in the future as I really did enjoy this quiche. Next time I plan to use my Hash Brown Quiche Crust for the crust and experiment. The Hash Brown Quiche Crust is a way to add a few potatoes for the potato fans and not have to bother with a crust.
