If you struggle with drinking the recommended amount of water per day (and so many of us do!) adding watermelon ice cubes definitely helps the cause and requires little effort for big rewards anytime of the year.

INGREDIENTS Watermelon Ice Cubes
Makes 24 cubes.
1 1/2 cups watermelon
1/2 cup water
1 tablespoon honey
1 tablespoon lemon juice
** I find the honey is adequate for sweetness; however, you can add a touch of sugar or stevia if desired for additional sweetness. This is a very flexible recipe and can be easily tweaked for your taste preference.
- Prepare your watermelon by cutting into medium thick slices.
- Remove the rind and seeds from the watermelon.
- Cut the watermelon into medium size thick pieces.
- Add all ingredients to a blender.
- Pour into ice cube trays. (even cuter are watermelon ice cube trays!)
If you are using a whole watermelon, I love this helpful watermelon slicing gadget to prep a whole watermelon. A few hours are needed to freeze the watermelon puree. Add the watermelon cubes to a glass of water or brighten up a glass of lemonade! Add a sprig of basil or mint to the glass or water for a festive and healthy drink.
